Okay, so I've been working on a cheesecake pie recipe in my mind for a while and finally motivated to do it today. Let's face it, cheese "cake" is actually pie so I am taking it back into the pie category.
This pie may sound weird or too rich with the chocolate chip cookie crust, but it's a really great match. The salty, little bit of dark chocolatey crust is a good match against the creamy, slightly tart filling...it's almost like how milk goes with chocolate chip cookies. Plus I made the filling to be very light and airy so you don't feel like you're eating a big, dense chunk of cream cheese with sugar mixed in.
I think I will make a small amount of this next weekend to see how it sells. Anyway, it would be fun to make an extra type of pie to make up for not being open Fourth of July weekend, July 6th and 7th...not that you will care because everyone will probably be at the Russian River or somewhere the fog can't reach. Although, if anyone wants to order a pie for that weekend just let me know the week before.
